01.Origin Story

There’s something almost magical about the process of smoking brisket. It’s a ritual that demands patience, precision, and a deep love for the craft. Hours—sometimes an entire day—spent slow-cooking a tough, unassuming cut of meat until it transforms into a tender, mouthwatering masterpiece that melts in your mouth. As a brisket lover, I’ve visited to smokehouses across the Southern States, from famous barbecue joints to hidden gems, always in search of that perfect bite. Yet, amidst all the smoky goodness, one thing always stood out: the flavors were either overwhelmingly sweet or drenched in salt.

For years, I savored these experiences, but a health wake-up call changed everything. Like many Americans, I was told to reduce my salt intake due to high blood pressure. I realized that salt is everywhere—in every bite, in every dish. And as I started cutting it out, I began to see food in a whole new light. But my passion for barbecue remained. 

As I dived deeper into the world of smoked meats, I quickly discovered a harsh truth: almost every barbecue rub on the market relies heavily on salt, sugar, and mustard. Finding a rub that didn’t rely on these was near impossible. To make matters more challenging, my wife despises mustard; if even a hint of it was present, she wouldn’t touch the food. My quest for the perfect rub seemed doomed from the start.

But rather than give up, I saw this as an opportunity—a challenge to create something truly unique. Over the course of two years, through countless trials and taste tests, I embarked on a mission to craft a rub that would defy convention. I experimented, adjusted, and refined until finally, “Shake to Elevate” was born—a rub that doesn’t rely on salt, sugar, or mustard, yet bursts with flavor in every shake.

My culinary journey began in my early twenties, under the tutelage of Georgio, an Italian chef from Naples. I was fortunate to help him import fine wines from Italy, but the true highlight was his weekly cooking class. It was there that I first tasted authentic Italian pasta—an experience that ignited my passion for food and the pursuit of flavor that elevates the ordinary to the extraordinary.

In our world of mass-produced, one-note flavors, we’ve grown accustomed to the lazy crutch of salt and sugar. It’s easy to make something taste good with a heavy hand of either, but it takes real creativity and craftsmanship to unlock the full potential of food’s natural flavors. Too often, we’re denied the opportunity to experience the depth and complexity that can make a dish truly unforgettable.

“Shake to Elevate” is my answer to such desire. It’s more than just a rub—it’s an experience, an elevated experience. With each bite, I hope to offer something akin to the fireworks that light up the sky in that memorable scene from Ratatouille, where flavor bursts in ways you never expected. Be warned, this ‘Shake’ is for the adventurous, for those who seek to elevate their culinary journey beyond the ordinary, for there won’t be a way back from your awaken taste palate!
